間中也有客人問:乾麵上面有些灰白色的粉末,是發霉嗎?為什麼麵餅顏色形狀不同,有些深色有些淺色,有些大有些細?
正如在前文提及,我們生產的乾麵是經過八小時以上的乾燥程序,麵線内的水分含量幾乎完全消失,而霉菌是需要在非常潮濕的環境下才能生長。因此,乾麵會發霉的機會近乎零。那些白色也只是麵粉。除非,你把它弄濕或放進入雪櫃儲存。 乾麵只需要儲存在乾爽的環境,這樣便能夠存放一段非常長的日子,我們建議用密封的玻璃容器又或者密封的膠袋。假若你把乾麵放進雪櫃或冰箱,反而會令到麵條本身的濕度增加,那便有機會發霉和變壞。 至於乾麵的顔色、大小略有不同,那只是因為蒸焗時間略有偏差、加上天氣的變化、以及人工製造的誤差。 一般而言,乾麵的顏色、大小、形狀並不會影響本身的味道。 至於乾麵的烹調方法非常簡單容易,而且比即食麵更快、更健康。 你只需要用煲煲水,水滾之後放進麵餅,麵條變軟 (大約是一至兩分鐘)便可食用。你不用加任何調味,因為這個麵湯已經有味道。至於配菜,悉隨專便。 乾麵其實本身已經熟透了,你在煮的時候其實只是將水份適當地加入麵條之中。所以,如果煮多一點時間,麵條就會比較軟。相反,煮的時間短一些,麵條便會比較爽、硬。

Raw noodles contain the highest moisture level, followed by cooked noodles, and dried noodles with the least moisture level, accounting for less than 10% of the total. The Prawn Noodles, Egg Noodles and Spinach Noodles produce by Harvest Foods are dried noodles. By beating flour, cutting into strips, shaping, steaming, and drying for more than eight hours, the moisture level in the noodles almost disappears. Because of this, dried noodles can be stored at room temperature. As long as they are stored in a cool and dry place, their shelf life is as long as one year. Since there is almost no water in the noodles, the noodles are very fragile in nature, just like all crispy foods (such as potato chips), they are also very fragile. When purchasing, customers should carefully check whether the package has been opened or there are signs of damage. If in doubt, it is not recommended to buy, because our products cannot be returned or exchanged. Fortunately, even if the dried noodles are slightly broken, it will not affect the taste. Recently, we change the packaging of the 1-pound dried noodles to cartons style. The purpose is to increase environmental awareness and reduce the use of plastic.
