間中也有客人問:乾麵上面有些灰白色的粉末,是發霉嗎?為什麼麵餅顏色形狀不同,有些深色有些淺色,有些大有些細?
正如在前文提及,我們生產的乾麵是經過八小時以上的乾燥程序,麵線内的水分含量幾乎完全消失,而霉菌是需要在非常潮濕的環境下才能生長。因此,乾麵會發霉的機會近乎零。那些白色也只是麵粉。除非,你把它弄濕或放進入雪櫃儲存。 乾麵只需要儲存在乾爽的環境,這樣便能夠存放一段非常長的日子,我們建議用密封的玻璃容器又或者密封的膠袋。假若你把乾麵放進雪櫃或冰箱,反而會令到麵條本身的濕度增加,那便有機會發霉和變壞。 至於乾麵的顔色、大小略有不同,那只是因為蒸焗時間略有偏差、加上天氣的變化、以及人工製造的誤差。 一般而言,乾麵的顏色、大小、形狀並不會影響本身的味道。 至於乾麵的烹調方法非常簡單容易,而且比即食麵更快、更健康。 你只需要用煲煲水,水滾之後放進麵餅,麵條變軟 (大約是一至兩分鐘)便可食用。你不用加任何調味,因為這個麵湯已經有味道。至於配菜,悉隨專便。 乾麵其實本身已經熟透了,你在煮的時候其實只是將水份適當地加入麵條之中。所以,如果煮多一點時間,麵條就會比較軟。相反,煮的時間短一些,麵條便會比較爽、硬。

對於乾麵的迷思
各種麵製品依照加工製做過程可分為「生麵」、「熟麵」與「乾麵」。生麵成品水分含量最高、其次為熟麵、水分含量最少為乾麵,佔整體百分之十以下。 嘉禾食品廠生產的蝦籽麵、全蛋麵及菠菜麵, 就是屬於乾麵類別。由打麵粉、切條、成型、 蒸熟、再透過長達八小時以上的乾燥,麵線内水分含量幾乎消失。正是因為如此,乾麵是可於常溫保存的麵製品,只要保存在陰涼乾燥處,其保質期長達一年。 由於乾麵麵條內幾乎沒有水分,形成麵條的本質非常脆弱,就正如所有的炸脆食品 (例如薯片)一樣,也是非常易碎。顧客在選購時,應小心檢查包裝是否曾經被開啟,又或者有曾損毀的跡象。如有懷疑,便不建議購買, 因為我們的產品不設退換。可幸的是, 即是乾麵有少量的斷碎,也不會影響其味道。 現時,我們生產的1磅裝乾麵,將包裝改用紙盒,目的是要提高環保意識,減少使用膠袋。這項轉變得到大量的顧客支持,但同時亦會提高了乾麵易碎的結果。 我們非常感謝各位顧客的體諒和明白。 嘉禾食品廠出產的乾麵,是以傳統的製麵方法,以人手的技術借助機器的配合,所以生產的每一個麵餅大小、重量可能會輕微不一,這也是因為每一位師傅不同的手勢導致,以致每一個麵餅也是一件精心的藝術品。 About the Dried Noodles Various kinds of noodles can be divided into "raw noodles", "cooked noodles" and "dried noodles" according to the processing procedure. Recently, we change the packaging of the 1-pound dried noodles to cartons style. The purpose is to increase environmental awareness and reduce the use of plastic.
